My trusty cauldron is weighing down some eggplant to get the water out. I cut them a 1/4 inch thick, lightly salt them and do a single layer in between lots of paper towels. Left it for 3 hours. Tip- buy eggplant with a line on the bottom, not a circle. Fewer seeds ;]
Made a nice pot of sauce.
I use this brand now and run them through a mill. These tomatoes are by far the best I have used EVERR!!!
I bread and fry the eggplant and then try not to eat them all before I layer them in a baking dish :}.
The sauce on bottom of the baking dish and then, eggplant, sauce, parm, motz- three times. Forgot finished pic :[ but it was awesome!!!
Then a trip to Carvel and a movie night at home. How do kids go barefoot in the winter???
It was a good day with pop over for din din and lots of family time. Even Freddie got some extra love :}.
